dinner when richard is working.




Rich wasn't home for dinner so I ate like I like to......which is pretty darn weird.....because we don't eat like most people do when he IS home for dinner.




Last night I made apple crisp without butter and without a recipe. it was still good.


2 apples
1 cup oats
1 cup whole wheat flour (thanks for the wheat grinder Joyce and Paul....i love fresh flour)
1/2 cup brown sugar (how could it not be good with that much sugar)
1/2 cup apple juice
1 egg
cinnamon and nutmeg to taste
1 tsp baking soda

mix flour oats sugar and soda. stir in 1/2 cup apple juice and 1 egg. press 1/2 mixture into bottom small cake pan. cut apples small and put on top of 'crust'. Top off with the rest of the mixture like you do apple crisp. I guess you could substitute splenda... Bake 350 until you can smell it. Enjoy. I was able to stop at one piece...which is amazing. Wish someone lived close so i could share....




Tonight went a bit healthier and had wheat berry salad.
Again its a recipe i made up. Try it if you dare......

1 cup wheat berries
1/2 cup chopped onion
1 cup kale chopped small
1/2 cup chopped walnuts
alot of mustard
fresh thyme (as much as possible from dying winter garden)
1/4 cup parmesan cheese (fresh shredded kind)

I toasted the nuts in the new non stick skillet my mom gave me. then I poured some olive oil over them and added the onion - cooking until it was translucent. After that I added the kale and the wheat berries (which I cook in advance and freeze), thyme (which i went to the garden in the dark to hunt for). Once the wheat berries were heated through I topped with parmesan cheese and I dipped in mustard while eating. I'm still full, which is a miracle for having eaten at 5:30. Since baby started to grow im hungry ALL THE TIME.

That sounds interesting. I don't even know what kale or wheat berries are...

It sounds so good...Xilone and Miki love wheat berries! t helps that grandma puffer eats pretty weird too...

zic. im sure if you have food storage you have wheat berries. its just red hard winter wheat that you make flour out of (: Kale is a green thing. i bet they make it where you're going!

puffs! the gals will have to come over and have some in yogurt with me!
