If the shoe fits.......


So my brother Andy loves to call me a granola. Actually, I'm pretty sure he's not the only who thinks that I dont shave my legs and that I would rather live in the woods than in a fancy mansion. Despite the fact that both of those comments are true, I do enjoy granola food. I had never made it before Mom gave us this cool cookbook for Christmas. Here is the recipe I use (its like mark bitmans, but with dietitian additions)

6 cups real life rolled oats
2 cups almonds/peanuts
1 tsp cinnamon
1/2 cup honey
1/2 cup peanut butter
1/2 cup craisins
1 cup bran
1/4 cup flax meal

Heat oven to 350. In a bowl, combine the oats, nuts seeds cinnamon and honey. Spread evenly on a rimmed baking sheet and bake for 30-40 until its brown all over.

remove from heat and add craisins. cool completely and store

YUMMY. Hooray for GRANOLAS!!!!!

Meeting are so funny.




One of the funny parts of having a grown up job is going to meetings. I usually really like them because they give me stuff to laugh about the rest of the day - Starting with the fact that all of us nerdy RD's carry around big old nerdy PDA's that go off at 8:00 reminding us of our meeting (even though we are all in the office together anyways when the meeting starts). BTW - we also carry pagers and wear white lab coats....does it get worse than that?

Oh yeah, and i also like them because I usually learn about things I should start doing and because it gives me an idea of how things work @ the hospital. But sometimes one person talks alot more than they should (not always the same person, it rotates depending on who's got something they are peeved about) and then the meeting becomes a WOT (waste of time).

I'm sure someday, when I actually understand what's going on, that person will be me....but for now I just like to sit back and have a good time watching. Meetings are great.

For Christmas I received a fishing pole and reel for fishing for steelhead. So I went out on Saturday to try it out. On my way I ran into a guy who caught a nice steelhead and after talking to him for a few minutes he told me it was the first one he has ever caught and he has been trying for eight years. So sorry Nicole, Mom, Dad, Nicole's family and our friends in Utah it looks like we will be here for at least eight years if anybody cares. This isn't the fish but it was approximately this size. So if anybody wants us to move closer to home I need some tips.

The weather from the last week in Portland has been amazing and here is a picture of Mt. Hood I took, and a picture of what it is like in the Salt Lake Valley this week. Who said it rains all winter and we will never see the sun.

Hiking through the city to see an owl.






Although still chilly, thursday was a sunny day. Richard came home early and we drove downtown to go for a hike. yeah, that's right, hiking in downtown Portland. It's amazing how green it is in the winter here. At the end of the hike, there is a bird sanctuary, where I got up close and personal with an owl for about 15 minutes. They are creepy creatures. You would have loved it dad, there is a big tree on the hike, 241 feet to be exact, and it is "thought to be the tallest in any major american city" according to our hiking book. And - no big suprise - I rolled my ankle on the way home. It would have been reminiscent of logan hiking, except that it took us about 45 minutes to get home since we hit rush hour coming out of the city....blahhh. I miss logan hiking.

Now that we are done with the thesis.......

We went on this cool hike on another cliff. This time I wouldn't go any further after I saw the drop off. Richard took some nice pictures of the columbia for me though while he was out on the drop off (: Whata man. After the hike, we drove out on this cool bridge. It's sure nice to have our lives back now that the thesis is finished.

(mine won't be this bad, it's alot simpler than this and they will graft tissue from the roof of my mouth, actually this is a whole different surgery, but the closest I could find to a "pouch" - which is where the make a little pouch for the graft, shove it in the hole and sew up until it heals!)

A weird gift

This was Salem Hospital's gift to the RD's and food service staff:


Weird huh - but still nice to give us something. The most awkward part was carrying it home on the bus. I was hoping someone would try to attack on my walk between the hospital and the bus stop so I could make good use of that cheese knife.

Oh well, we put the wine bibber container to good use last night on new years eve (mmm martinelli's)! Thanks for a great night evan and jessica! Hooray for 2009.
