Random european lady: "this hike is two notches above kick a**"


Nicole: "rich, wait for me, i wanted to be first climbing out of the jungle and into the meadow, it's not fair that you made me carry the backpack"
Rich: "and im climbing the stairway to heaven...."


Rich: "wow, look at that view of Mt. Hood and the Boneville Dam!"
Nicole: "glad we're not down there.....i hate visiting the dam"

Nicole: "yikes, that's a big drop off"
Richard: "im not scared of heights hurry up you baby"

Nicole: "im getting dizzy on this ridge!"

Richard: "are we home yet????!"

Hi Richard and Nicole,

It does not look like we’ll be closing today. The lender is requiring the repairs to be completed prior to closing. Your rate lock expires on Tuesday, but the lender said they can fund as long as they have the receipt for the sidewalk by that morning. It sounds like that won’t be a problem. The listing agent and I will make sure the contractor knows how important it is for him to get us that receipt on Monday. Either way, I’ll be sure to keep you posted. I’m just glad that you are able to stay at your place until the end of the month!

In the meantime, can you please sign another extension? I’ve attached the addendum. To be safe, can you cross out the 29th in both places and write in the 30th? Please initial next to both revisions then sign and date at the bottom.

If it makes buyer feel any better I do have about 7 people who want to be called if sale were to fall through (which it will not) so he is getting a good, desirable home (eventually)

We've been living in a produce department since the 16th WAITING to move into the house.
(our stuff is all packed in banana and apple boxes....the ethylene smell is starting to reside finally)

this is the latest excuse for why we cant move in (from the real estate guy)

Here’s the latest from the listing agent. We are trying to find out if there’s any possibility of closing before the sidewalk has been completed, but it’s not likely. I’ll let you know what I find out. I appreciate your patience…hang in there, we are almost there!

We were FINALLY able to secure a city permit 30 minutes ago for sidewalk. Sidewalk will be torn up and forms built Friday, It will then be re-inspected with pour on Monday. Please know that I realize this has created hardship for your buyer but the city permit process and change of contractor really slowed us down. I have made sure the contractor has stood on standby and available the moment the permit came through and have put on the pressure with multiple calls daily.

I will e-mail you invoices the moment I have them. Please know that getting this done is my highest priority this week.

Summer Vegetable Fritata (using our homegrown basil and rainbow chard)
from gourmet magazine

  • 6 large eggs
  • 6 large fresh basil leaves, chopped
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 oz prosciutto, finely chopped
  • 1 tablespoon olive oil
  • 1 lb medium zucchini (about 3), halved lengthwise and cut crosswise into 1/4-inch-thick slices
  • 5 medium Swiss chard leaves, stems discarded and leaves finely chopped (1 1/2 cups)
  • 12 scallions, trimmed and finely chopped
  • 5 zucchini blossoms*
  • 2 ozfinely grated Parmigiano-Reggiano (1 cup)

Preparation

Preheat broiler.

Whisk together eggs, basil, parsley, salt, and pepper in a bowl.

Cook prosciutto in oil in a 12-inch ovenproof nonstick skillet over moderate heat, stirring, until edges begin to crisp, about 2 minutes. Add zucchini and chard and cook, covered, stirring occasionally, until vegetables are just tender, about 8 minutes. Add scallions and zucchini blossoms and cook, uncovered, stirring occasionally, until just wilted, 1 to 2 minutes. Pour egg mixture into skillet and cook, lifting up cooked egg around edge using a spatula to let as much raw egg as possible flow underneath, until edge is set, about 2 minutes (top and center will still be very loose). Sprinkle cheese evenly over top.

Broil frittata about 6 inches from heat until set, slightly puffed, and golden, 2 to 2 1/2 minutes.

Cool frittata 5 minutes, then loosen edge with a clean spatula and slide onto a large plate. Cut into wedges.

Sadies Hawkins Dance Date

dont know if that's the right name or whatever but......

The only dance I went to in high school was prom with my big bro bryan (i was very anti-social, high school was a rough time for me). Although richard went to a few dances (even though he was scared of girls) -because he had friends- he never made it to the sadies hawkins (or whatever its called)..... So rich and i did our own matching T-shirt date this weekend. 'Marathon dated' it and everything.....

Friday: hiking through the west hills of portland in the rain, window shopping portland boutiques, dinner on 23rd street @ a NCY pizza place (way deliciouso) and we got to eat outside while people watching (the best thing ever). We even saw a man holding two pink bags while his wife held the puppy.

Saturday: Wake up at 6:30 am (on a Saturday) to "dance" up Dog Mountain in the gorge. (Its called dog mountain because Pioneers had too eat their dogs to survive.) It was cool to hangout in the clouds up there. This is my favorite Oregon hike so far. It's more utah style....dry pine forest.....(that evolves into Oregon jungle)......2700 feet up in 3 miles.....great vistas....amazing wildflower meadows............
that's a pretty rough picture of me.....but oh well.....Thanks for the matching shirts Joy!


That's the end of our date.......unless you count buying a fridge entertainment.....but we did do some real dancing in the car to our new favorite song......"that's not my name".....sorry, no video footage of that.....next time.

one more picture of sand amazingness





these guys were serious pro's it was hard to get close enough to get a good picture. It was amazing to see all the tools they used to make their masterpieces.

the end of a busy week.

After having 3 visitors, 2 days of work, packing up the apartment and getting news on the house, we decided to close out our busy week by checking out Sandcastle day on cannon beach and hiking Neahankie Mountain just above Manzanita Oregon. We are blessed to live in such a beautiful place!

the ridge we were on was a bit sketchy and we both had a touch of vertigo up there.....hence the unpleasant look on my face despite the amazing view of the beach.......

bumble bee bread (this is not a recipe)




I was inspired to make bread by this funny from the sunday morning newspaper.



I did not forget the salt. But..................


I forgot that you should add water to the egg wash...............


Instead of fresh baked bread, our house smells like burnt eggs. but the bumble bee bread still tastes good!

Best Bike Ride in Portland

Nicole and I are thinking of doing a century ride so we went on a good ride yesterday afternoon. It has a little of everything some nice flat stretches, steep hills, nice vistas, good down hills, bike lanes the whole way, even time to think about your ancestors as you ride through the cemetery. A good bonus is if you do it during the rose festival at the halfway point you can snag some free treats on the waterfront park.

The only negative was we had to bike through some "gray water" in the homeless district of Portland.

The map doesn't show the springwater corrider that we followed along the willamette river or the trail through Tyron Creek Park but it gives the general direction we followed.

waiting game is right......

the bank accepted our offer on may 5th. we had the inspection on may 10th. it is now june 4. the closing date is supposed to be june 16th. we still aren't sure that the bank is going to fix the sewer. we dont know if we should buy a fridge yet. we still dont know if we can switch our mail........this is annoying. the end.
